Who's that 1 character on level 766 that I don't have unlocked?

Bubblegum friend? My 3 choices of friends to play level 766 are Yeti, Misty and I'm guessing the last character is called bubblegum or something like that? I only have 240 out of 600 gained from that character. How do I get that character unlocked?

That's Bubblegum Troll. You need to win him during one of the special challenges. There was one a month or so ago, and there will most likely be another one in a few months.

I have a special challenge going on right now that's called spring stories. There's a day 1 through day 7 and there's tab's below that say 1,2,3. I already completed Tab 1 and getting close to completing tab 2. I hope after spring stories is over, That the special challenge for bubblegum troll can pop up. What color does Bubblegum troll use? Yellow? I've noticed the only color candy that's not used by a friend is yellow.

Yes @Rocko1, he does use the yellow candies. Another event probably won't come up again for several months for Bubblegum Troll since we just had one, I think in January. They usually seem to be about a year apart. But that doesn't mean there won't be one sooner. So keep playing those special events.

To all thanks for welcome; however I think there are two Rocko’s. I (Rocko_1) only play BubbleWitch3 so I have no idea who or what bubblegum troll is.
