    Who knows this kind of pasta?

    Orecchiette, are typical of Puglia, in the south of Italy. I make them (handmade) all Sundays with ragu' for my family.

    I just made my spaghetti sauce yesterday, I make a big pot and freeze the rest, come in handy on days I don’t feel like cooking 😂

    I start with frying 4 large onions, add a big pack of ground beef ( sorry, I always wing it, so I don’t know the measurements) seasoned the beef, when it’s fully cooked I drain the meat. Then I add garlic ( a lot) then tomato paste, tomato sauce and tomato juice. Stir and add red pepper flakes, oregano, a lot of basil and 4 bay leaves. Add 2 cups of mushrooms and stir, reduce heat and cook for 2:30 hours on low temp. stirring every 1/2 hour.

    Then I make lasagna 😋a bit of sauce on the bottom, noodles ( 4 side by side already boiled) mozzarella cheese, more sauce, noodles, cheese and repeat. Then put it in the oven for 20 minutes and broil the top for 5 minutes and voila. And when it’s my son’s birthday, he always ask me to replace the noodles in the middle for bacon ( precooked bacon) 😁

    @KimElston I only cook spaghetti in red sauce with minced pork, hot dogs/sausage and some veggie. Below is my recipe and the serving is for 4 adults 😅.

    • 300/400 gm of spaghetti
    • 500gm of minced pork
    • 4-6 Smoked/BBQ hot dogs
    • 3 medium sized red onions (reason I use red onions because of its aroma)
    • 5-6 cloves of garlic
    • A can of champignon mushroom
    • A can of tomato paste
    • A jar of bolognaise sauce
    • 3 small/medium sized green bell pepper
    • 3-4 medium/large fresh tomatoes diced
    • 3-4 stalks of celery.
    • 2-3 pcs of carrots

    First marinate the pork with some salt, pepper and a drizzle of olive oil. Set aside and move on to prepare other ingredients i.e. sliced/diced the hot dogs/sausages, minced the garlic, cut all the vegetables in cubes, diced the onions and sliced the champignon mushroom.

    Put oils in the wok and heat it up (in Malaysia, most of the Chinese households uses wok to cook their dishes because of its size 😀 and convenience). Once, the pan/wok is hot enough, put in onion and fry then add garlic. Fry them till they are slightly golden, add in the minced pork, fry till it's partly cooked and mix in the hot dogs, champignon mushroom, diced carrots & tomatoes and lastly bell peppers. Continue to fry these ingredients till it's fragrant and add in all the sauces, salt and pepper to taste. Let it simmer until it's well cooked.

    At this point of time, you can start boiling the spaghetti. Add a drizzle of olive oil in the boiling water so that the spaghetti wont stick. Boiled it according to the instruction in the packet or until you can break it (not too soft) (I normally use chopstick to do this). Once it's ready, drain the spaghetti and put on a bowl. Add a lil bit of olive oil if needed. Serve a plate of spaghetti and add in the sauce, toss them together and add parmesan cheese on top.

    Oh I love pasta and I've actually made it today. Today is chickpea and spinach, I know, weird combo but it tastes great with tomato, garlic and herbs.

    This is the pic from when I first tried it, with cheese sauce added. I liked how the chick pea sat in the pasta like a pearl in a shell.

    @Cagnes is this similar pasta to what you make or different? I love you hand make them, how long does it take?

    This is an amazing idea to talk about since I'm Italian and I have been eating spaghetti almost all of my life, Different varieties of pasta and spaghetti 😄😍.... 🍝

    Here are some of my favorite dishes:

    1. Cottage cheese alfredo

    Ingredients

    • Cottage cheese 100g
    • semi-skimmed milk 250ml
    • cornflour 1 tbsp
    • garlic granules 1 tsp
    • wholewheat spaghetti 150g
    • parmesan (or veggie alternative) 25g, finely grated
    • black peppercorns ground to make ½ tsp
    • flat-leaf parsley a small bunch, roughly chopped

    2. Prawn spaghetti with tomato, chilli and basil

    Ingredients

    • olive oil 1 tbsp
    • garlic 1 clove, crushed
    • dried chilli flakes ½ tsp
    • baby plum tomatoes 150g
    • white wine 150ml
    • spaghetti 200g
    • basil a handful of leaves
    • raw peeled prawns 225g
    • butter a generous knob

    3.Creamy sprouts and pancetta spaghetti

    Ingredients

    • pancetta 100g, diced
    • salted butter 25g
    • echalion (banana) shallot 1, finely chopped
    • garlic 2 cloves, crushed
    • brussels sprouts 400g, shredded
    • white wine 50ml
    • single cream 200ml
    • spaghetti 200g
    • lemon 1, zested and juiced
    • parmesan 50g, finely grated, plus extra to serve
