And mushrooms are my favorite! I bought 2 - 1 lb. packages of sliced mushrooms every week. One is for my salad and then other for cooking with other veggies.

Very nice and informative Ana, I absolutely love my vegetables but am not a vegetarian. I have tried and a lot of times do make a meatless dinner but can't seem to get away from meat or fish totally. I love animals and that makes it especially hard and of course there are the health benefits to think about. Maybe someday but for now I will try to increase the meatless meals.

One if my favorite veggie dishes is Eggplant Parmesan...that with a salad and garlic bread/toast, you have a delicious meal 🤗

I hear you @Anahita_2005 . I have been a vegetarian for 31 years. Best decision I ever made. Has been a lot of pressure too being around meat eating family and friends. If I hear ‘Just eat a burger’ one more time I think I will loss it!😤 luckily I have a super supportive husband who respects my choices ☺️

I have two favourite veggie dishes. Black bean burrito 🌯 and lentil chilli with salsa 🍛 😋

Apparently today is also national coffee day, so I should be celebrating today 😎

As far as the dishes go, I think the best vegetarian dishes for me are pumpkin gnocchi with mushrooms or a vegetarian pad thai 😁

I love this I am a vegetarian my favorite is a big loaded salad with sunflower seeds and ranch dressing with a baked potatoe with butter and sour cream and a garlic breadstick I could eat that every day of the week lol. Being a vegetarian around here where I live people look at you like you are so weird when you go into a restaurant and order like a vegetarian burger and stuff I just go on and ignore people like that I feel sorry for people who has such a miserable life that they have to look down on other people to make their self feel good I just pray for people like that I have always been a vegetarian I did try meat when I was little but hated it so I have been a vegetarian ever since I was like 4 years old so happy vegetarian to everyone who is like me

Every day I have salad for lunch and I add pisatchio nuts, almonds and cashews. I also add raisins. I've had sunflower seeds but haven't had them in a while. Maybe it's time to start adding them too!
