In honor of Earth Day - I thought it would be fun to share some recipes using fruits and/or vegetables:
Here is one for a tomato zucchini bake:
This easy side is the most delicious way to use up your summer vegetables.

INGREDIENTS
1 lb. zucchini (about 3 medium), chopped
1 pt. cherry tomatoes, preferably multi-colored, halved
2 cloves garlic, minced
Extra-virgin olive oil, for drizzling
kosher salt
Freshly ground black pepper
1/3 c. freshly grated Parmesan
2 tbsp. torn basil, for garnish

I don't have the exact recipe (I never cook by the book!) but here's how to make a healthy and delicious chocolate avocado mousse! It's really tasty and guilt free 😉
Peel 2 avocados and put them in a blender along with: a pinch of salt, cocoa powder (dark one preferably), agave syrup (or honey), a spoon of coconut milk (or any milk you like) and blend... voila!
