Yes @Adriana_Renata all the candies of the final cascade of each level count (I assume that's what you mean?) and if you press "skip" they still count as well, so don't hesitate pressing the skip button.

Yes, at certain level ranges there are levels with no blue candies which can be really frustrating. However I have run some tests and have found that this does even out over each set of two episodes.
