Some sounds have been missing in the game for a while, and honestly it feels a bit empty without them. Any idea when this might be fixed?

I have noticed the same thing. For example, when finishing a level, the little green gummy bear doesn't say anything anymore, or, when completing a slice of cake in Bake a Cake, Olivia the octopus does not say "Woo Hoo" anymore. Hopefully they fix it soon. I like the little sayings and sounds; it adds to the game experience.

You're right, some sound effects are missing from the game. We reported it (I think) in November and followed up again in December. We were told the studio would be working on it in January. I assumed it was fixed with one of the updates, but I haven't checked myself (because I always play with the sound off/muted).
I'll gladly check with our manager again to see if there's any news on this. I expect to get an answer early next week, and then I'll get back to you.
