I live in Nicaragua and here we have many typical dishes, but the one I like the most is Vigorón.

Vigorón is a typical Nicaraguan dish that contains cooked yucca, pork rinds and cabbage salad, a must in most Nicaraguan dishes. The same cabbage salad used in Vaho, Chancho con Yuca and la fritanga.

This dish is famous throughout Nicaragua, however its production is higher in Granada, it is common to find street vendors offering this delicious dish in those colonial streets. The Vigorón from Granada is served especially if or if with a glass of fresh cocoa, pinolillo or tiste, drinking them with each serving of yucca with pork rinds is a delight.
