Jelly level 160, what causes the electrified/charged pieces

It appears that sometimes the pieces get some kind of bonus charge, but then if I use a coloring candy, for instance, it fizzles out and seems to diminish the color candy effect. What causes the pieces to be charged and what is it supposed to be doing? I can't get the benefit because I'm not sure what the point is.  Thanks.
