This has happened to me on several levels. I only need to clear one more cherry and it never appears. I'll spend 10 gold blocks, literally have 25 moves and still no cherry. I literally have to start the level over again in order to get the last cherry. By then, spent too many gold blocks. Using iPhone 14 Pro Max.

What you're describing, sounds like something that has happened to me before, a couple of times. With me, it was caused by me not understanding where the cherries fell down from. Partly because of this, I always take my time to figure out a level, and I (almost) never use the GoldBars before I have the maximum number of moves after playing the level a certain amount of times (for me, playing on a Windows 11 laptop and a Android tablet, this is 65 extra move in exchange for 10 GoldBars).
I use those repetitions to figure out the level, what are the goals, what part of the field or goals do I need to focus on first.I also figure out what is the best or average result upon finishing the level without using GoldBars as far as remaing goals / numbers of erased "cells" on the field are considered. I wait until I get the message "65 moves extra" when I finish the level, and only then I start considering using those precious GoldBars.
So basically, my advise to you is: take your time to study the level extensively before using GoldBars. Another thing which sometimes helps me when CC Saga is "acting up", is shutting down the app and re-opening it again. Or, if I'm getting really desperate, "clean up" my laptop / tablet, turn it off completely, restart, clean it up again, and then open CC Saga again. I'm guessing something similar should be possible on your iPhone.To free my laptop / tablet from cookies and and other nasty stuff, I use the "CCleaner"-app. Don't know if it is available for iPhone, though.

What you're describing sounds like a glich in the game that happens occasionally where a lot of cascades & explosions happen on the board at the same time and the algorithm of that level thinks that the last cherry has dropped already and won't appear no matter how many times a player plays on for. The only option is to quit the level and start again.
