Why does level 12185 look different? You have to release 16 dinosaurs.
Is this the last level in your episode? You probably have the horrible spearmint snowstorm event, which changes the last level of each episode. Do not worry: This event will finally be over tomorrow, so then you may get the same level 12185 you see on the YouTube videos.

Our teams are constantly making changes and improvements to the game and in-game levels. It is possible for some levels to be changed completely or slightly adjusted so they won't reflect the videos online especially if those videos are old and thats the reason why the levels look different.
