I had 75 gold bars that suddenly disappeared and I know I only have six.

Since your level progress appears to be there but not your gold bars, it’s possible the game didn’t fully reconnect to the correct account when you signed in.
Could you please try the following to force a clean sync:
• Log out of the game • Close the game completely • Restart your device • Open the game again and connect it using the same login method you originally used to back up your progress (Facebook, King account, or the correct email) • Stay connected to the internet and leave the game open on the map for a few minutes so it can sync
