This depends on the device you are using. If you play on an Android device, you need to go to your Google Play account and add your payment details there. If you play on an Apple device, you need to go to your Apple ID/iTunes account and add payment details.
If you play on Facebook, then check with Facebook Support on how to edit or remove your payment details. I also found this page on Facebook Support.

On Android, open the Google Play Store app, go to Menu > Account > Payment methods, and add a new payment method.
On Apple devices, go to Settings > [your name] > iTunes & App Store, tap your Apple ID, select View Apple ID, then Payment Information to add a new method.
