Why do we have these Star Tournaments every week. It really hinders my progress and ability to win weekly bonuses.

It's not the Star Tournament that hinders your progress, really, it's the fact that you have reached the end of the game! King only make 60 new levels each week, and the Star Tournament is a filler event to help you pass time while new levels are being developed. There’s nothing to be done about it unless they start releasing more levels each week (which, honestly, isn't something I’d want).
