I often go to YouTube to watch a level that Iโm struggling to pass and watch it. My question is. Why do the ones I watch get more moves than I do ? I have seen as much as 10 more moves

Also watch for videos tagged, new version. A large number of levels have been changed in general.

Probably because the players making the videos play the game on a Windows PC @Darcy_Cook
All of the levels are released first on Windows. After a week (maybe two) the number of moves is reduced and then the levels are released on mobile platforms.
If you can't find a video that has been uploaded within three weeks of the date you are watching it will never match the level you are playing.

King makes regular changes to its games and it is very difficult for youtubers to keep up with these. Some changes only involve reducing (sometimes drastically) the number of moves available. Since the level set up remains the same, these videos are not updated to take into account the lower number of moves.
