what’s the deal with fish not actually helping you in your level, and candies are supposed to fall in a certain spot to help you win the level and for some reason, the level ends without the candy actually falling into the slot!

From my experience, the jelly fish seem to behave according to some rules, and those rules depend on the level's objectives. You can use these behaviors to your advantage, but there are some things that are out of your control.
If you have to bring down Sprinks, the jelly fish don't prioritize candies and blockers directly beneath them. They usually target the hardest blockers first before going for things beneath the Sprinks. Color Bomb + Jelly Fish can be a useful combination for clearing a layer off a bunch of icing in a single move.
If you have to collect colored candies, special candies, or toffee swirls, the jelly fish will not target what you need. Instead, they will either go for a random spot on the board or try to cause chaos by aiming for your special candies. It's unfortunate, but you can plan around this: for example, you can aim a striped candy at a toffee swirl and match a Jelly Fish to hit the striped candy.
In jelly levels, jelly fish don't like eating other jelly fish. If a jelly fish is sitting on top of that last hard-to-reach jelly, that's not good!
There are some other quirks and rules that I cannot remember off the top of my head, but if you pay close attention, you can eventually get a feel for how they work. It's pretty complex, much more so than how Jelly Fish behave in Candy Crush Soda Saga.
As for the other point brought up (the level ends without the candy actually falling into the slot), I don't know exactly what you mean by this. Someone who has experience with that kind of issue can probably explain it, but I can't.
