I've completed levels 25 & 27 but there not gold so how do I redo them

thanks for sharing the picture, I now understand you mean golden pins.
You're awarded a golden pin only if you pass the level on your first try. That's the meaning behind golden pins.
If you fail the level on your first try, you don't get a golden pin and it's not possible to gain it again on the same level, I'm sorry

maybe you passed these levels but didn't achieve scores with 3 stars on them and you wish to redo them to get 3 stars?
Are you able to replay them?
