No, I don't think players can postpone the moment they earn prizes from Weekly Contest.
I have never seen this in my game at least.
I guess you could try delaying/missing the log-in but I don't know how wide the timeframe is before the event resets and rewards disappear.
I only have experience in Candy Crush, if I don't claim my prize on Monday, it's gone by Tuesday and I get nothing ๐ฌ
