I started with 5 gold bars and won 5 more for completing an episode and 10 more for winning the race so how is it that I only have 10 gold bars?

Are you sure you haven't accidentally used it on extra moves on a level? It's not possible to lose Gold bars. We don't have access to your game records so it's worth checking with Player Support here so they can check it out for you.
