played level 329, got 3 stars and therefore unlocked the 3 bonus animals, but when playing level 341, need bonus animal from level 329 but it doesn't look like i've unlocked it yet!

Maybe there was a slight delay or something? Have you tried again ever since?
I generally would clear cache and restart my PC. Then give it another go in Google Chrome.
