Mushrooms!!

How do you create more mushrooms? Do you have to match other items next to them to create them? And how do I get them to expand and not shrink? Is there a process? I’ve just been randomly playing the game and can eliminate the other items, raindrops, suns, carrots etc but I never have enough mushrooms to complete the quantity. My last game I only had 16/40 even though I collected over 300 of each of the other items. :(

The good thing about mushroom is unlike everything else, you don't need to match next to them to make them grow. But you will to spread them. They aren't so daunting once you are used to them. There is a detailed explanation here:
