I'm omnivore but have been known to eat vegan for days when I am with friends or family who are vegans. My favourite dish remains my father's dhal (his plain yellow lentil dish). My dad's Chinese but we Singaporeans really love Indian food so it was one of his best dishes. He doesn't cook any more because he's too elderly and shaky.

Here is my take on Ratatouille, which is not only a funny Pixar flim, but also a sort of French Vegetble stew, made with Zucchini, Eggplant, Onions, Mushrooms, Parsley, Garlic Tomatoes and either Parmesan Cheese or you can use Nutrtional Yeast, which is pretty tasty...

I'm not 100% Veg, but with every meal at lunch or dinner I eat vegetables and fruits!!!!! I love it and I can't live without them!!!!!!! Every day I cook different vegetables or simply boiled and you eat with extra virgin oil and 🍋 or raw vegetables!!!!

I became a vegetarian to be a good role model for my nephew, as my sister was raising him as one (I’d long wanted to make the switch, but I am not a big fan of veggies). He’s full grown & married now, but I’m still meat free - thanks mainly to tofu!
There are so many ways to make it, and for a while I survived on soy based “meat substitutes” which sort of look and taste like fish, beef, or even turkey.
I live in the southern part of the US, where there aren’t many vegetarians. I can’t tell you the number of times I’ve been eating out and say, “no meat,” only for the waiter to then ask if I want the chicken or the fish!. 🙄
There are a handful of Indian restaurants in the area, which is the only type of cooking where I actually like the veggies, so I don’t have to live on tofu and junk food alone. 😅
