Why do some levels require collecting all the cherries or nuts, but they don't always appear?

I am currently on level 296. I have had the problem of either the cherries or nuts required in a game never appearing. So therefore you automatically lose because there is no way to complete the requirements! It has happened on an earlier level and twice on 296. Each time I have passed previous levels in one try so I have the extra "goodies". Now, because there was no way to win, I have lost all those extras! I am NOT happy! What do you suggest?
