Hello @txmedic846 and welcome to the community. The ice stars are just a pretty addition to your map when you get three stars and then your total points exceed a pre-designated amount. They don't give you anything extra except look pretty. However some people go back and re-do previous levels to get all 3 stars and now they can go back and try to get the Ice or sugar stars.
