How can somebody go from 125 levels to 240 in one day?
A level can be played in about a minute if you have a win streak and play starting boosters. That would mean this person is playing 115 levels, it could be done in 2 or 3 hours playing non-stop. There is an episode race challenge going on at the moment, the prize is 80 gold bars. I suspect this player is competing in this and playing full out. Some players play only one level a day, others play one, two or three whole episodes a day. A few just go mad and play all day and don't live. That is the sad truth. It all depends on your playing style, how much gold you have and which levels you are playing at.
