My game is moving SO slowly now that I almost don’t want to play… why did that disappear and is there a plan to bring it back?

That "Speed" button is still under testing. All the testing features will be moved from one group of players to other groups of players until the Candy Studio team is done with the testing. As players, we do not know how long these tests last and who all are included in the tests!
I have seen many players liking the Speed button feature and asking to bring it back🤩 I am sure that all your feedback will help the Candy team to end the test and send it to the games permanently.
