I was emailed that I got to level 2500 but my badge did not update it still showing level 1000 and never updates.

We do not have any badge for passing level 2500! That email is just a promotional feature and does not give you any rewards!!
But, you can update your Profile picture with 2000 level banner. All you have to do is --> Replay level 2000 and win it -- go back to map screen and you will see that your profile picture is updated and you won't see level 1000 anymore😉
