Why are there only 16 plays on Level 8975 when the demos have at least 34 plays
?

Hello @beveanne and welcome back to this community! What is happening is that King periodically change levels, whole episodes in fact, to make the game harder or easier. The videos on YouTube are mostly all out of date now, they are from times when there were many more moves and luckier boards.
As well as moves King change the chances of a lucky board appearing in levels from time to time: Often whether you will pass of fail a level is not really determined by the number of moves you have, but if the right candies drop from the top to create the candies you need to pass. The game is heavily manipulated by King to encourage players to spend money.
If you find that 16 moves is not enough to pass then you will either have to wait for King to change the level difficulty or pay gold bars for extra moves to pass.
