As I said before, there's a major update every 2 weeks and, sometimes, a minor one in between. Recently there was a major one, 1.193.1 and after a few days, a minor one, 1.193.3. Usually, the minor ones contain fixes, not new levels. On the 1st of January, it should have been a major update containing new levels, but it came today with the name of a minor version (1.293.4.2).
Technically speaking, the expert is right, we don't know when 1.194 will be out.
As for the second question, there's no such option. When you discovered the removal of the chocolate and the conveyor belt in the lower levels and the removal of the frog in the higher levels, you were in the testing groups. The today's update does't bring new levels only, it brings these 2 mass redesigns too. Now, all players have those levels that you once detected.
By the way, there is still the old version on Microsoft Store.
Would that be Update 1.194 that you mentioned in your post above @Johnny_Crush? I just got an answer from Alex the Witch, "Game Expert" who told me King don't know when this update will be released.
You seem to be better informed than the "game expert", which does not surprise me!
By the way, a cheeky question off topic. Do you have any opinion on the removal of chocolate and the frog from so many levels? I am so fed up with the mind numbing rewrites of levels, I can't help but ask the expert of experts.
Just released the update on Google's Play Store. It contains 9 more episodes (up to level 18 380) and it should be soon on Microsoft Store to be downloaded and played on Win 10/11 App.
This is not unbelievable. A lot of players are scoring this much at the moment because there is a live leaderboard competition ongoing. You will have to pass this many levels to win the Winter Cup.

Every 2 weeks King release a new version of the game that has unreleased episodes. Then, every wednesday the gates are opened and players have acces to those unreleased episodes.
Today there were no episodes beyond the gates. In the current version of the game (1.193) there are 1217 episodes that were already released on Win 10/11 App.
New episodes will be available in the next version, 1.194 that was supposed to come out today, but I don't think that somebody works today at King.
