Why does the levels cheat us out of stars?

I have been getting 3 stars on the last 3 or 4 levels where I only have 2. Makes me upset 😖 and sad 😢

I may be mistaken, but it sounds to me like you are earning all 3 stars when completing a level, but when you go to the episode map it shows that you only earned 2?
