If I purchase a new Kindle will I remain on the same level of Soda Crush as I’m currently on with my old device?

Yes, if you use a King account to save your progress (for more info read here) , then you can change device and retrieve all your progress and gold bars once you log in to your King account on the new device.

If you don't use a King account, all your progress will be accessible through the old device only.

Unfortunately, boosters cannot be transferred as they're not saved on King servers.
