Here, due to the energy crisis, cooking in the oven is a luxury, we use the gas stove. I'm sorry you're alone, but you shouldn't take Christmas too seriously, the proverb says "better alone who are badly accompanied" If you can, cook for people who can't get a meal a day, for the poor, for the last, God will appreciate it

I will be spending the day with my son and family so I'm doing salads to bring to them. You're right the holiday should be to help others who don't have money. I was an employment counselor before I retired and we used to send unemployed people for training. One year this man came in for training and we sent him to college to finish his degree. He was a dad raising his son on his own. My fellow employee and I gave his son a new school bag and we also gave him cash to go buy himself something and more for his son. That made me feel so good to be able to help someone.

Laudable initiative, at Christmas I prefer to give than receive, I like to see the satisfied smile of those who receive something they would like but cannot. When I was on Facebook, I met a lady of Northern Ireland. We wrote to each other on WhatsApp even though I was no longer on Facebook. Then in 2018 she and her husband came to visit us and we hosted them for 3 days. Let's continue to write to us and at Christmas and Easter I will send you a package with many Italian delicacies. She reciprocates with tea and perfume. We are very close and she is my long distance sister.

@zainab786 they turned out good but I didn't have any fresh herbs and I added some butter to the oil. I added onions and carrots to the potatoes and baked them all together, I won't do that again. I think it prevented them from getting as crispy as I wanted them. Shaking the potatoes did make a huge difference @Racoon7.
I'll be trying this again but I'll follow your recipe next time @zainab786. I'll think of you every time I shake my potatoes before baking them!😂

🤣🤣🤣. And have a bit of dance along with it. While shaking them😀😃. Its OK. At least you tried them. Sorry. My mistake you can use dry herbs 🌿. If; you don't have fresh .I only use fresh rosemary because, I have it on my window seal.tge mixed herbs I use dry .the mixed one you get in a bottle/ packet.

Pizza Meatballs
1/8th of recipe (3 meatballs): 114 calories, 4.5g total fat (2g sat. fat), 256mg sodium, 2.5g carbs, 0.5g fiber, 1g sugars, 15.5g protein
Prep: 20 minutes
Cook: 20 minutes
Ingredients
1/3 cup finely chopped onion
1/4 cup finely chopped bell pepper
1/4 cup finely chopped mushrooms
1 lb. raw extra-lean ground beef (4% fat or less)
16 slices turkey pepperoni, chopped
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1/2 tsp. garlic powder
1/4 tsp. dried basil
1/8 tsp. salt
1/3 cup pizza sauce
1/2 cup shredded part-skim mozzarella cheese
Directions
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.
Bring a skillet sprayed with nonstick spray to medium heat. Add onion, bell pepper, and mushrooms. Cook and stir until softened and lightly browned, about 4 minutes.
Transfer cooked veggies to a large bowl. Add beef, chopped pepperoni, egg substitute, garlic powder, basil, and salt. Mix thoroughly. Firmly and evenly form into 24 meatballs, and place them evenly spaced on the baking sheet.
Bake for 10 minutes.
Gently flip meatballs, and arrange them closely in the center of the sheet. Evenly top with sauce and cheese. Bake until meatballs are cooked through, sauce is hot, and cheese has melted, about 5 minutes.
