You can't go back and complete them on levels you have already beaten. They only count if you beat the level you are doing them on. Example: you need to match a fish with another fish 30 times. You could match a whole lot of fish, but if you don't beat the level you are matching them in, they don't count. Also, you have to select a task off the list, and that one will be the only one that counts. You can switch between tasks, but you can only have one active one at a time.
