I was logged in and then I had to restore my iPhone 8 to a backup (my software was glitching badly) and now I want to log back in again (it logged me out and my progress has gone from 549 to 467) but whenever I try to log in it just says ‘there was a connection error. Try again in a bit.’ I’ve tried on WiFi and on my 4G, I don’t want to delete the app in case I lose my progress and can’t log in.

please check that your device has at least 2GB of memory storage so the app functionality doesn't get affected. It seems that the last time your app was connected to the server the last synced level was 467 and not the most recent 549. So this level should be saved in case of reinstalling, I think.
If you're having this kind of message then your app got corrupted most likely, and the reasons behind this could be many. You can't email support from your app for the same reason you can't log in so a possible way to solve this problem is indeed unistalling and reinstalling. You'd lose all the boosters and stored lives because those are stored locally on the device but goldbars and progress will be preserved because they get synced to the server. If you happen to lose your progress though, and you shouldn't but if you do anyway for whatever reason, a community manager could kindly manually restore it for you in cc jelly saga support section here:

However in my opinion your game has been crashed and you have to reinstall your game but dont worry you will not lose your game progress. You will lose your boosters and lives only.
