Yes @Vanessa_Lionheart I'm from Greece and we use eggplants along with potatoes. And different spices. I have visited your country twice because it's near us and because the first time (just for a weekend) I was too excited with the scenery and the food and the hotels that I decided I had to come again for a whole week!

My favorite two things to eat are..

Pozole Rojo this soup is off the charts amazing! I hook mine up with extra lime and hot sauce.😉

And steak tacos on a corn tortilla not flour tortillas (yuck). I love extra cilantro, lime and salsa verde on mine.
