It has been 2 weeks and I still am having connection issues and no feedback from admin on how correct the issue. It looks like I will have to uninstall the game, which means I will lose absolutely all my progress and start from scratch. There is definitely a glitch that needs to be fixed.

At the moment there are no connections issues present in Soda, that the community is aware of.
So I would need you to elaborate more on the problem
First off reinstalling the app is the last resort option and you won't lose your progress unless you haven't been saving your progress with a King or Facebook account. On the off chance you don't have an account and your progress is lost, King Player Support is able to manually restore your progress

If you own Android mobile, visit device Settings - Apps - Candy Crush Soda Saga - Storage - Clear Cache. Be careful not to click "clear data" which deletes your boosters
If you own Apple mobile, visit Settings - Safari - Clear History and Website Data
If you own a Kindle fire, check this out

I am playing soda sage for the last while, I am at level 2600. Unfortunately, when I started playing, I didn't realize I should create an account. 2 weeks ago, I created an account, and since then, I have had Connection issues, it says I am not connected to the internet, even though I am. I can only claim the daily prize, absolutely nothing else. Because of this, I can't login on my computer, I can't save my game, I can't play my current game on my phone, absolutely nothing. I am currently playing on an Acer computer, lots of storage left. I had zero issues with connection until I created my account.

If you're not able to log out and log in and most importantly you're not able to save your progress because Soda app is offline then it looks like your Soda app has the same error message I shared the picture of.
In this case I'm afraid you'll have to try to reinstall the app. Something inside Soda app went wrong and troubleshooting is not able to fix this kind of error, unfortunately. Since the app is offline, you're not able to contact King Player Support directly from your app and ask them to look into it either.
with no King account or Facebook account in place before this type of issue arised, I'm afraid the your progress saved solely on your device local storage and not King servers will be deleted when you reinstall the app
Once you reinstall the app you'll be able to log in to your King account or create one if you don't have one already. Soda app will be able to connect to the servers then and then it will be possible for you to contact King Player support and ask them to manually restore your progress and reinmburse your boosters if you had purchased them

Welp, I bit the bullet and did and uninstall/reinstall on my computer and the results were surprising. I didn't lose everything! I was at 2600 level and it dropped me to 2574. I did lose all my boosters and add ons, which sucks, but not losing my levels was a big win. lol
